Small fabrication shop here. We buy resin and reinforcement to a datasheet, but I've got no real way of knowing whether the parts coming off our bench meet those numbers once we've laid them up. How would I go about proving it?
The key thing to hold onto is that a datasheet figure describes material made and cured under ideal lab conditions, whereas your part carries your layup, cure, fibre fraction and any voids. The two can differ, sometimes by a lot, so verifying on real production parts is a sensible QA step. The usual approach is to test representative coupons cut from actual parts, or from offcuts and witness panels made alongside a production run, for the properties that matter to you, such as tensile or flexural strength, glass content or degree of cure. Sample so the coupons genuinely reflect your process, rather than a one-off best effort. If a batch has to be right, materials testing on parts from your own line will tell you where you actually sit against the sheet.
